Fluffy Pancake Recipe

With our favorite Macs down and no weekend pancakes, we’ve been trying to get some fluffy pancakes and found this recipe here that makes just that! Thought of sharing so we can all add a little sunshine to our lives and maybe even to make this for Mother’s Day breakfast. The video doesn’t write the recipe out so thought I’d extract it here for ease of reference in case you wanna just skip straight to making the recipe!
Ingredients
A:
- 1 ¾ cup all purpose flour
- 1 tbsp baking powder
- ½ tsp coarse kosher salt
- 3 ½ tbsp sugar
B:
- 1 ½ cups buttermilk, room temp
- 2 eggs, room temp
- 1 tsp vanilla extract, room temp
- 1 tbsp butter, melted and cooled to room temp
- 2 tbsp sunflower oil, room temp
C:
- 3 egg whites, room temp
- Pinch of salt
Steps:
1. Sift dry ingredients in A together.
2. Mix wet ingredients in B together.
3. Pour mixture B into mixture A, stir to combine to form the pancake batter.
4. Beat C together till medium peaks.
5. Fold C to the pancake batter.
6. Grease griddle/any flat pans and add some butter and oil to the pan. Blot out excess oil from the pan.
7. Add a small amount of batter on griddle and wait till the batter is dry around edges and bubbles start appearing the middle before flipping. Continue till you’ve finished the batter!
